A tendência dos consumidores pelo consumo de frutas frescas tem vindo a aumentar pela qualidade organolética e quantidade de vitaminas, minerais e substâncias antioxidantes que possuem. No entanto, são altamente perecíveis, e sofrem grandes alterações físicas, químicas e biológicas à temperatura ambiente, prejudicando assim, as suas propriedade se tempo de vida útil. Para minimizar este problema, as frutas frescas são mantidas a baixas temperaturas desde o produtor até ao consumidor final, através da utilização de sistemas de refrigeração, que apresentam enormes custos com o consumo de energia elétrica. A diminuição dos consumos de energia dentro da cadeia do frio e em particular nas centrais de fruta através da implementação de medidas de eficiência energética é indispensável e determinante para o aumento do
rendimento dos produtores bem como um reforço para a competitividade dos estabelecimentos industriais. No presente artigo, apresentam-se os resultados de um trabalho sobre o desempenho energético das centrais de fruta, da Região da Beira Interior. Nesta avaliação mostram-se, as características da actividade, infraestruturas, câmaras e sistemas de refrigeração, consumos de energia, indicadores específicos de consumo de energia e o potencial de poupança de energia com a aplicação de medidas de eficiência energética.
The trend of consumers by consumption of fresh fruits has increased by organoleptic quality and quantity of vitamins, minerals and antioxidants which possess. However, they are highly perishable, and suffer great physical, chemical and biological changes at the ambient temperature, hampering thereby their properties and life span. To minimize this problem, the fresh fruits are kept at low temperatures from the producer to the final consumer, through the use of cooling systems, which have huge costs in the consumption of electricity. The reduction of energy consumption within the cold chain and particularly in fruit conservation units through the implementation of energy efficiency measures is essential and crucial to increasing farmers' income and to strengthen the competitiveness of the industrial establishments. In this article, we present the results of a study on the energy performance of fruit conservation units in the Beira Interior Region. In this evaluation we show, the fruit unit characteristics, infrastructures, chambers and cooling systems, energy consumption, specific indicators of energy consumption and energy saving potential with the application of energy efficiency measures.
