Abstract(s)
As organizações de produtores de hortofrutícolas, e em particular, aquelas sediadas na
região da Beira Interior, que lidam com frutas endógenas extremamente perecíveis,
como por exemplo o pêssego, têm uma necessidade acrescida de otimizarem os fluxos e
processos produtivos. O principal intento é garantirem, antes de mais a segurança
alimentar, mas também de assegurar melhorias ao nível da gestão do armazenamento
em frio e da distribuição dos produtos no Agribusiness.
Nesta dissertação são usadas técnicas de otimização para providenciar melhorias nos
fluxos produtivos e na gestão do armazenamento em frio e distribuição através de
ferramentas Lean, aplicadas a um caso de estudo: Sociedade Agrícola da Quinta de
Lamaçais. Visa a análise de estratégias que permitam melhorar os fluxos produtivos,
layouts, tempo e métodos. As implementações de técnicas de melhoria destacam-se
pela acessibilidade e redução de custos.
A revisão bibliográfica permitiu identificar as ferramentas Lean de otimização dos
processos e fluxos em organizações de produtos, cadeia de distribuição de produtos
hortofrutícolas, a aplicar ao caso de estudo. Assim, foram usadas as ferramentas 5S, o
Kaizen e o Value Stream Mapping. Posteriormente, foi desenvolvida a metodologia a
utilizar para a aplicação destas ferramentas de otimização. A aplicação das ferramentas
permitiu reduzir o tempo de ciclo em 4,37 minutos e o lead time em 7,1 minutos de
todo o processo. A aplicação das ferramentas Lean permitiu reduzir, ou até mesmo
eliminar, desperdícios, ao longo de todo o processo, reduzir as movimentações
desnecessárias, adaptar o layout e maximizar o espaço de trabalho, nivelar stocks,
assim como um maior envolvimento do fornecedor, tendo em vista a melhoria
contínua.
The organisations of horticultural producers and, in particular, those headquartered in the Beira Interior region, which deal with extremely perishable endogenous fruits, such as peaches, have a greater need to optimise production flows and processes. Above all, their main aim is to ensure food safety, but also to ensure improvements regarding cold storage management and product distribution in Agribusiness. In this thesis, optimisation techniques are used to provide improvements in production flows and in the management of cold storage and distribution through optimisation Lean tools, applied to a case study: Sociedade Agrícola da Quinta de Lamaçais. It also aims to analyse strategies that improve production flows, layouts, time and methods. The implementation of improvement techniques stands out for the accessibility and cost savings. The bibliographic review allowed to identify the Lean tools for the optimization of processes and flows in product organisations, the fruit and vegetable distribution chain applied to a case study. Therefore, the tools used were 5S, Kaizen and Value Stream Mapping. Subsequently, the methodology to be used for the application of these optimisation tools was developed. The application of the tools allowed to reduce the cycle time in 4,37 minutes and the lead time in 7,1 minutes of the whole process. The application of Lean tools allows to reduce, and even to eliminate wastes throughout the process, to reduce unnecessary movements, to adjust the layout and to maximize the workspace, to level stocks, also allowing a greater involvement of the supplier to continuous improvement, as well as a greater involvement of the supplier with a view to continuous improvement.
