Abstract(s)
As PME do setor da restauração enfrentam desafios diários e ao contrário de outros
setores não possuem tanto conhecimento sobre as tecnologias da Indústria 4.0, que
aliadas às ferramentas Lean as podem auxiliar na deteção de anomalias, das suas causas
e na resolução das mesmas. Utilizar ferramentas que nasceram no seio industrial neste
setor pode ajudar as PME a detetar problemas de forma económica e que contribuam
para a melhoria do desempenho das mesmas.
O objetivo principal do trabalho consiste na proposta de medidas de melhoria para PME,
do setor da restauração, utilizando tecnologias da Indústria 4.0 para detetar problemas,
de forma a chegar, através da utilização de ferramentas Lean, às causas e respetivas
soluções para esses problemas.
As metodologias utilizadas são a explicativa e o estudo de caso, uma vez que as
tecnologias da Indústria 4.0 e as ferramentas Lean foram aplicadas num restaurante com
objetivo de dar a entender que a utilização destas tecnologias e ferramentas também
podem trazer benefícios quando usadas no setor da restauração, e não somente no
industrial.
O sensor aplicado no frigorífico do restaurante permitiu detetar que as temperaturas não
cumprem o estabelecido no HACCP, sendo um problema originado por inúmeras causas
que foram detetadas através da utilização do diagrama de espinha de peixe.
Posteriormente, a ferramenta 5W2H permitiu resolver algumas das causas desse
problema, no entanto, deixava uma causa específica por resolver. A capacidade do
frigorífico é ultrapassada e tal só foi possível resolver através da junção da
estandardização e de uma ferramenta de gestão de stocks.
As tecnologias da Indústria 4.0 juntamente com as ferramentas Lean, devem ser
utilizadas nas PME do setor da Restauração para resolver problemas existentes nas
mesmas de forma económica e simples.
SME in the restaurant sector face daily challenges and unlike other sectors they are not as familiar with Industry 4.0 technologies that combined with Lean tools help in detecting anomalies, their causes and solving them. Using tools that were born in the industry sector helps SME to detect problems in a cost-effective way and contribute to the improvement of their performance. The main purpose of this work is to suggest improvement measures for SME, in the restaurant sector, using Industry 4.0 technologies to detect problems, in order to get, through the use of Lean tools, to the causes and respective solutions for those problems. The methodologies used are explanatory and case study, since Industry 4.0 technologies and Lean tools were applied in a restaurant with the aim of demonstrating that the use of these technologies and tools, can also provide benefits when used in the restaurant sector and not only in the industrial sector. The sensor applied to the restaurant's fridge detected that the temperatures did not comply with the HACCP, a problem caused by several causes that were detected through the use of the fishbone diagram. Subsequently, the 5w2h tool allowed to solve some of the causes of this problem, however, it left a particular cause unsolved. The fridge capacity is exceeded, and this could only be solved through the merging of standardization and a stock management tool. Industry 4.0 technologies combined with Lean tools should be used in SME in the restaurant sector to solve their own problems in a cost-effective and simple way.
