Na atualidade, as principais preocupações das indústrias recaem sobre os custos, a energia e a qualidade. No que respeita aos custos, é de salientar que estes constituem mesmo o maior obstáculo para o alcance do sucesso no ramo empresarial. Assim, constata-se que é necessária a otimização de todos os custos em todos os setores. O principal custo abrangido por muitos setores recai na energia, uma vez que se tem verificado, com o decorrer dos anos, um aumento significativo do consumo da mesma, o que remete para o compromisso de se eliminar o desperdício.
Assim, e atendendo à grave crise económica que atravessa o nosso país, torna-se pertinente que as empresas se tornem vigilantes, prestando uma maior atenção aos custos que produzem, uma vez que estes são um fator que determina a permanência destas empresas no mercado.
Deste modo, o principal objetivo da presente dissertação passa por analisar e compreender o sistema de funcionamento das câmaras de cura/maturação que estão presentes na Cooperativa de Produtores de Queijos da Beira Baixa. Através deste objetivo pretende-se apurar os consumos energéticos reais e verificar se esses mesmos consumos são idênticos, visto que a marca e o modelo das câmaras é o mesmo. A par com o principal objetivo, também se pretendeu analisar, de uma forma geral, a eficiência energética da cooperativa supracitada. Por fim, foi apresentada uma proposta que vá de encontro a uma redução dos custos de energia.
At present, the main concerns of the industries falls on costs, energy and quality. With regard to costs, it is noteworthy that these are among the biggest obstacle to achieving success in the industry. Thus, it appears that it is necessary to optimize all costs in all sectors. The main cost concerning many sectors lies in the energy, since there has been, over the years, a significant increase in energy consumption, which leads to a commitment to eliminate waste. Thus, given the serious economic crisis that crosses our country, it is pertinent that companies become vigilant, paying greater attention to the production costs, since these are one factor that determines the permanence of these firms. Therefore, the main objective of this dissertation involves analyzing and understanding the operating system of ripening/maturation chambers that are present in the Cooperativa de Produtores de Queijos da Beira Baixa. Through this goal is intended to calculate energy consumption and actual fuel consumption and to verify that these same are the same among the chambers, since the make and model of the chambers are the same. Along with the main objective, it is also intended to analyze, in general, the energy efficiency of cooperative. Finally, a proposal was made to try and promote a reduction in energy costs.
